Zucchini is an easily digestible vegetable, rich in valuable nutrients and very low -calorie. Its subtle taste makes it easily adapt to many dishes – both classic and modern.

Zucchini nutritional values:

  • provides minerals such as potassium, magnesium, manganese,
  • is a source of dietary fiber, supporting digestion,
  • Supports the hydration of the body (over 90% of the zucchini content is water).

Thanks to these properties Zucchini has a positive effect on the functioning of the digestive system, supports metabolism And it can be a valuable element of the diet of people who care about the figure.

This dish is distinguished by a simple composition and low work. At the same time, it looks elegant on a plate and tastes great – also after heating.

Ingredients (for 3-4 portions):

  • 2 medium courgettes,
  • 300 g of minced meat (preferably beef or mixed),
  • 200 g of mushrooms,
  • Little onion,
  • clove of garlic,
  • 2 tablespoons of olive oil,
  • salt, pepper, sweet pepper,
  • Optional: tarts of mozzarella or Parmesan cheese,
  • A glass of homemade tomato sauce (passat, basil, garlic).

Preparation:

  1. Cut the zucchini into thin slices – preferably with a mandoline or acute peeler. Sprinkle with salt and set aside for a few minutes to soften. Then dry with a paper towel.
  2. Finely chop mushrooms, onions and garlic and fry in olive oil until they evaporate excess water. Season to taste.
  3. Fry the minced meat separately. After frying, combine with fried vegetables. Mix the obtained mass thoroughly and season as desired.
  4. Apply a portion of stuffing on each zucchini slice and roll it into a roll. If the slices are too thin or brittle, you can lay them with a light tab.
  5. Place the rolls in an ovenproof dish, pour the tomato sauce and – if necessary – sprinkle with grated cheese.
  6. Bake for 25-30 minutes in an oven preheated to 180 ° C until the zucchini softens and the top is slightly browned.
  7. You can prepare rolls earlier and store in the fridge. After reheating, they retain their taste and consistency.

The recipe for zucchini rolls is flexible and can be easily modified, e.g. instead of minced meat: Lentils, tofu or cooked buckwheat (vegetarian or vegan version), and instead of mushrooms: spinach, sugar peas, peppers. For a sharper taste, you will need the addition of chili or smoked peppers, and e.g. instead of tomato sauce: yogurt with garlic or herbal pesto.
