Tomatokeftedes is the quintessence of cuisine from the south of Europe. These pies are really delicate, but also tasty and extremely aromatic. In addition, only a few ingredients are needed to prepare them.
In Poland, we associate pancakes, primarily potato, as an addition to main dishes, such as goulash or scrambled eggs. Of course, we can also eat them as a separate meal. Tomatokeftedes, which in southern Europe, is eaten as a meze, i.e. a snack. To prepare about 10 pieces Greek tomato cakes You will need:
- ½ kg of tomatoes,
- ½ teaspoon basil,
- ½ teaspoon oregano,
- ½ teaspoon of dried parsley,
- 1 red onion,
- 100 g of wheat flour,
- 2 tablespoons of oil,
- 2 cloves of garlic,
- Salt, pepper.
The basic recipe uses wheat flour, but you can also replace it with a whole grain version.

Peel the onion and chop it very finely. Garlic squeeze through the press. Burn the tomatoes, remove the skin and cut into small cubes. Mix tomatoes with onions, garlic and favorite herbs. Pour the flour and combine everything thoroughly until you get a homogeneous mass. In a hot pan with olive oil Fry the fritters after 2-3 minutes on each sideuntil they are browned. Serve with tzatziki sauce () and fresh salad of seasonal vegetables or classically – with Greek salad. You can also serve tomatokeftedes with a Greek DIP from feta cheese, i.e. firskafteri.
