A refreshing raspberry cake. A delicious dessert in a summer climate

Malinka is a combination of a simple sponge cake with cream foam, based on sweet cream, sugar and gelatin. The whole is complemented by raspberry jelly with the addition of fresh fruit. The dessert is light, refreshing and very tasty. It will taste not only small, but also large gourmands.

Before you start baking, prepare the right sheet. The 20 × 30 cm form will work well.

Ingredients for sponge cake:

  • 4 eggs,
  • 70 g of fine sugar,
  • 4 tablespoons of vegetable oil,
  • 120 g of cake flour,
  • 1 teaspoon of baking powder.

Ingredients for cream foam:

  • 200 ml of cream (36 percent),
  • 2 tablespoons of powdered sugar,
  • 3 teaspoons of gelatin,
  • 75 ml of hot water.

Ingredients for jelly with raspberries:

  • 2 raspberry jellies,
  • 800 ml of water,
  • 500 g malin.

Gover the eggs to room temperature. Cool the cream very much.

Separate yolks from proteins. Beat proteins with a foam mixer. Without interrupting whipping, add sugar to it and then after one yolk. Turn off the mixer. Pour the oil into the foam with a thin guard and mix with a spatula. Sift flour and baking powder into foam. Mix gently again – only to combine the ingredients.

Put a 20×30 cm mold with baking paper. Transfer the dough into the mold and level the surface.

Put the dough in the oven preheated to 170 ° C. Bake for about 25 minutes – to the so -called dry stick. Take the sponge cake out of the oven immediately after baking. After 10 minutes, remove from the mold and cool up the top.

Prepare jelly as described on the packaging, but in a smaller amount of water (800 ml per two jellies). Set aside to cool.

Melt gelatin in milk. Beat the cream cream with the addition of powdered sugar (sift it through a strainer). Pour the cooled gelatin into the cream and mix thoroughly.

Place the sponge cake again. Spread the cream evenly on it. Put the dough in the fridge for half an hour. Spread raspberries on a slightly concentrated cream. Pour jelly (preferably one tablespoon) on top.

Put the dough in the fridge for about 3-4 hours – to complete jelly concentration.
