Miller’s croquettes They are quite unusual, because the pancakes are made of bread. This patent should appeal to all those who are looking for a way that nothing is wasted in the kitchen. You will make the stuffing with sauerkraut with the addition of mushrooms, onions and aromatic dried boletus. Cut the ready croquettes in the egg and breadcrumbs, they will be delicious and crunchy. Such a dish will work not only for dinner, but also as an idea for a party dish.
You will need: to prepare the dough for croquettes:
- 4 slices of white bread,
- 200 ml of milk,
- 2 eggs,
- 3 tablespoons of sugar,
- 1 teaspoon of baking powder.
Stuffing:
- 450 g of sauerkraut,
- 400 g mushrooms,
- 2 large onions,
- 20 g of dried boletus,
- 2 bay leaves,
- 2 allspice seeds,
- 1 teaspoon of cumin seeds,
- 1 teaspoon of marjoram,
- 1 teaspoon of salt,
- ½ teaspoon of black pepper.
Breading:
- 2 eggs,
- 110 g breadcrumbs.
Additionally:
Prepare the cake. Cut the slices of bread into small cubes and put in a kitchen work. Chop them until a smooth mass is formed. Add milk and mix the whole until a uniform consistency.
Pick up the eggs, add baking powder and sugar. Mix to get a smooth pancake cake.
Heat a small amount of oil in a frying pan. Pour on a ladle on one pancake and spread the dough evenly at the bottom. Fry to gold on both sides. Put the ready pancakes on a plate.
Prepare the stuffing. Soak the mushrooms in the water for at least 12 hours, then squeeze them and put them in a bowl.
Drain the sauerkraut from excess liquid and mix in a pot with dried mushrooms, bay leaf and allspice. Pour the whole with water so that it covers all the ingredients. Cook the whole under a partial cover for about 45 minutes.
Cut the onions into small cubes and fry it with cumin in oil for 10 minutes, stirring occasionally. Add the marjoram and fry the whole for another minute.
Clean and dry the mushrooms. Cut them into slices about ½ cm thick and add them to fried onions. Do not mix them for the first 3-4 minutes, then mix the whole and fry until the whole liquid evaporates.
Transfer mushrooms with onions and well -drained sauerkraut to the kitchen work bowl. Blend the whole several times to chop the whole fine.
Fold croquettes. Apply about 2 tablespoons of stuffing on each pancake and fold it gently – first fold the sides inside, and then roll the whole in a roll.
In a deep plate, break the eggs, and pour the breadcrumbs into the other. Heat the oil on medium heat in a frying pan.
Dream the croquettes first in the egg, then bread in breadcrumbs. Put them on hot fat and fry to a nice browning from all sides. Replace the oil when it becomes too brown. Miller’s croquettes Serve warm, preferably with the addition of borscht.
