I love kitchen experiments, especially when it comes to dishes without meat – I have been limiting this product for some time and I have been looking for interesting options with pleasure. It is undoubtedly zucchini stew. Simple to prepare, very nutritious, full of aroma. Perfect when you take care of the line or just feel like a light meal.
- 1 zucchini,
- 2 tomatoes,
- 1 red pepper,
- 1 onion,
- 2-3 cloves of garlic,
- 250 ml of tomato passage,
- 2 tablespoons of clarified butter,
- 1 teaspoon of oregano,
- 1 teaspoon of basil,
- 1 teaspoon of smoked peppers,
- ½ teaspoon chili,
- lemon juice,
- a bit of honey,
- Salt, pepper.
Cut the zucchini into semi -slices. Sprinkle with salt and set aside for 15 minutes. After this time, strain the juice that she let go.
Peel the onion and cut into feathers. Finely chop garlic cloves. Fry the onion in 1 tablespoon of clarified butter. At the end of frying, add garlic, smoked peppers and chili.
Remove the seed nest from the pepper and cut it into particles. Dice the tomatoes.
Add zucchini and peppers to the pan. When they soften, add tomatoes.
Fry the vegetables until the tomatoes are softened, but they do not start to fall apart yet. Then add herbs to the pan and pour the tomato passata. Simmer for a few minutes.
Add a second tablespoon of clarified butter to the pan. Season with salt, pepper, lemon juice and honey.
Serve zucchini stew with loose -cooked rice. It also goes well with potato purée or fresh bread.
