Pancakes:
- 150 ml of milk,
- 100 ml of sparkling water,
- 125 g of wheat flour,
- 1 egg,
- 1 pinch of salt.
Filling:
- 100 g of fresh spinach,
- 1 bunch of chives,
- 1 green pepper,
- 2 green pepperoni peppers,
- 1 onion,
- 1 tablespoon of olive oil,
- ½ teaspoon salt,
- ½ teaspoon of black pepper.
Additionally:
- Breading egg,
- Frying oil.
Prepare pancakes.
Sift flour and salt into a bowl. Stake in the egg and mix well. Add milk and water, then beat the whole until a smooth and homogeneous mass.
Set aside the dough for 30 minutes to rest. Then heat the pan gently smeared with fat and pour the dough on a ladle. Fry pancakes on each side for 1-2 minutes.
Put the ready pancakes on a plate.
Prepare the filling.
Finely chop the onion, chives and both types of peppers.
Heat the oil in a frying pan and add the onion. Fry it to vitrify, then add green and pepperoni peppers. Fry for another minute.
Add chives and fresh spinach to the stuffing. Fry only to wither. Season with salt and pepper.
Fold pancakes.
Apply 1-2 tablespoons of stuffing on each pancake. Collapse the sides inward so that they overlap and form an envelope.
In a deep plate, break the egg and heat the oil in a frying pan. Male envelope in the egg mixture and put on fat. Fry on each side for 1-2 minutes, to gold.
Serve ready pancakes with green stuffing, immediately after preparation.
