This mushroom is considered one of the tastiest. I am talking about sulfur, which resembles chicken taste. In addition, it is distinguished by a unique color. Thanks to this, we can easily find it in the forest and recognize it. We suggest where you can meet and what to make.

Sulfur bile, as the name suggests, we can recognize by its intense yellow color, thanks to which we can easily see it from afar. The specific color of the fungus depends on the age of the fruiting bodiesbecause this shade changes from a bright yellow -orange color to apricot, lemon and pale yellow, and in the case of older specimens – creamy -white.

The fruiting bodies are made of semi -circular hats, which can reach a width of up to 50 cm. The surface of these hats is matte, wrinkled and uneven, and the edges are usually sharp and wavy.

In the case of young specimens, the flesh is soft and juicy, and their fans are not yet completely developed. According to some, they resemble yellow mounting foam. Freshly collected They secrete a strong, sour smell that will also help us recognize this specimen.

Sulfur bile, due to the fact that it is classified as parasites, we will most often find on live deciduous trees. It can be gathered in many regions of the world, and it is common in South America and Europe.

It usually appears on willow, poplar, clone, oak or robinia. It also happens that it grows in orchards, growing on cherries, plums or pears. The peak of fruiting bile sulfur falls in spring and summer.

It is worth adding that the bile sulfur is not protected in Poland. So we can collect it everywhere, except for areas where the harvest of mushrooms is forbiddeni.e. in national parks or nature reserves.

Important information is also that in accordance with the Regulation of the Minister of Health of November 3 of 2022, this fungus is allowed to trade and produce mushroom preserves. So we can eat it without fear. It contains ingredients such as polysaccharides, phenolic compounds, terpenes and vitamins.

This mushroom is also valued for its taste, which makes it known as a mushroom-spur or forest chicken (chicken mushroom chicken of the woods). This is due to the fact that its texture and taste resemble poultry meat. It is true that it does not have a distinct aroma in itself, but with the right seasoning and correct thermal treatment, it can become a tasty ingredient.

It is often used to create The meatless version of nuggets or chops. Some also use it as Add to casseroles, veg pies or meatless version of the trot.
