Kurpie pancakes You can call the croquettes in the rich version. This is one of those dishes that requires a lot of commitment and time from the chef, but the effect is worth it. It is a filling dish inspired by Mazovia. Classic pancakes should be wrapped stuffing based on sauerkraut, sausage and barley. Puffed pancakes are enough to bake in the oven and then serve with cream mushroom sauce. They will come out insanely tasty.
You will need: to prepare the dough for pancakes:
- 300 g of wheat flour,
- 2 large eggs,
- 250 g mleka,
- 250 g of water,
- 3 tablespoons of rapeseed oil,
- A bit of salt.
Ingredients for stuffing:
- 500 g of sauerkraut,
- 100 g of barley,
- 200 g of pork sausage,
- 1 onion,
- 1 allspice,
- 1 bay leaf,
- half a teaspoon of granulated garlic,
- half a teaspoon of sugar,
- half a teaspoon of marjoram,
- Frying oil,
- Water for cooking cabbage and groats.
Ingredients for sauce:
- 250 g mushrooms,
- 500 ml of water or poultry broth,
- 200 g of cream cream,
- 1 onion,
- 1 tablespoon of clarified butter,
- 2 tablespoons of wheat flour,
- marjoram to taste,
- Salt and pepper to taste.
Prepare pancakes. In a bowl, mix the flour with eggs, milk, oil and a pinch of salt. Whip on a smooth dough without lumps. Set aside for 10-15 minutes to rest. Heat the pan, fry thin pancakes until golden brown on both sides. Put on a plate.
Rinse the cabbage with cold water (if it is very sour), chop.
Transfer to the pot, pour water so that it only covers it. Add bay leaf and allspice. Cook covered until softened. Then pour the porridge and cook slowly, stirring occasionally for about 15-20 minutes.
Prepare the stuffing. Peel the onion, dice. Cut the sausage into half slices. Fry in a small amount of oil.
Mix strained cabbage with groats in a bowl with onions, sausage. Season with granulated garlic, marjoram, sugar, salt and pepper.
Fold pancakes. Apply a portion of stuffing on each pancake and wrap like croquettes. Place in a greased heat -resistant dish. Bake in the oven preheated to 180 ° C for 15 minutes.
Make a mushroom sauce. Finely cut the onion and mushrooms. Fry in clarified butter. Pour the flour and stir vigorously. Gradually pour in water or broth, stirring constantly until the sauce thickens. Add cream, marjoram, season with salt and pepper. Cook 2-3 minutes.
Serve hot pancakes in Krupiowsk with a large portion of mushroom sauce on top. You can decorate with fresh marjoram or parsley.
