The prices of blueberries in some bakeries and confectioneries make you dizzy. Instead of paying 20 or even PLN 30 for a sweet snack, prepare the entire homemade, delicious yeast cake with blueberries. All you need is wheat flour, eggs, sugar, yeast, some milk, butter and, of course, berries to conjure up insane Summer dessert. The dough comes out fluffy, and slightly sour fruit perfectly combine with the sweetness of butter crumble. Such afternoon tea will disappear from the plates in the blink of an eye.
Before you get on baking, prepare the right form. Works well 36 × 24 cm sheet metal.
Cake ingredients:
- 750 g of cake flour,
- 60 g of fresh yeast,
- 4 eggs,
- 120 g cukru,
- 1 packet of vanilla sugar,
- 125 g butter,
- 250 ml of milk.
Ingredients for crumble:
- 70 g of cold butter,
- 70 g of wheat flour,
- 3 tablespoons of sugar,
- 1 packet of vanilla sugar.
Additionally:
- 500 g berries,
- A bit of butter and breadcrumbs to smear the sheet.
Preparation of the dough. Heat the milk to make it warm, but not hot. Melt the butter in a saucepan and leave to cool.
Crack yeast into the bowl, pour in 2 tablespoons of flour and 1 tablespoon of sugar. Pour warm milk and mix everything thoroughly. Set aside in a warm place until the yeast is nicely swinging and moving. In a separate bowl, beat the eggs with the remaining sugar to a light, fluffy mass. Add beaten eggs and vanilla sugar to the grown leaven. Mix everything – a fluffy mass will be created.
Sift flour to the mass. Add melted and cooled butter. Make with a hand or mixer with a hook so that the dough is uniform and smooth. Do not sprinkle too much with flour – it should be soft and slightly adhesive.
Grease a baking tray about 36 × 24 cm with butter and sprinkle with breadcrumbs. Transfer the dough into the mold, level and cover with a cloth. Set aside for about 15 minutes to grow slightly.
Preparation of crumble. Put the cold cubed butter into the bowl, add sugar, vanilla sugar and flour. Rub with your fingers until lumps resembling wet sand are formed.
Planting the dough. Wash and dry the berries. Sprinkle the dough with fruit and cover with crumble. Put in the oven preheated to 180 ° C (top-down, without hot air) and bake for about 45 minutes until the top is nice golden.
