Fried potatoes with zucchini This is the perfect combination of simplicity and taste – despite the use of a minimum of ingredients, it will delight every lover of good cuisine. Before you start preparing the dish, get the following ingredients:
- 750 g of potatoes,
- 500 g of zucchini,
- 4 tablespoons of olive oil,
- 3 cloves of garlic,
- 2 tablespoons of fresh thyme,
- 1 teaspoon of salt,
- ½ teaspoon of black pepper,
- ½ teaspoon of peppers.
Cut the potatoes and zucchini into cubes about 2 cm in size.
Finely chop the garlic. Add potatoes to it, then mix everything in a bowl, with the addition of salt and pepper.
Heat 3 tablespoons of olive oil in a frying pan. Transfer the potato mixture into it and fry the whole for 3-4 minutes without mixing. Then mix the whole and fry until a nice, light brown color from all sides for the next 8-10 minutes.
Add finely chopped thyme and peppers. Mix and move the potatoes to the bowl. Set aside
Heat a spoonful of olive oil in the same pan. Add zucchini and season with salt and pepper. Fry until golden brown and soft, but not overcooked.
Transfer the zucchini to the potatoes and mix the whole gently.
Serve fried potatoes with zucchini, immediately after preparation.
Store the remains in the fridge for 2 days. Heat in a pan.
