If you want to prepare a quick and nutritious dinner, be sure to try the recipe for zucchini and salmon casserole. The recipe does not require cooking potatoes or frying fish, thanks to which the preparation of a delicious meal does not take much time. You will find here a large portion of healthy fats in the form of fish and olive oil rich in omega-3. The culmination of the dish is zucchini mascarpone sauce, delicate with a refreshing note of mint.
To prepare this recipe, you will need:
- 800 g of potatoes,
- 250 g of smoked salmon in slices,
- 150 g of grated cheese,
- A bit of oil.
Stuffing:
- 2 medium courgettes,
- 1 onion,
- 2 cloves of garlic,
- 1 tablespoon of frying butter,
- 100 g sera mascarpone,
- 50 g cream 30 percent,
- several mint leaves,
- Salt and pepper.
Peel the potatoes, divide it in half and cook al dente (10 minutes is enough). When they cool down, cut them into slices.
Wash the zucchini, cut into thin slices. A few of them salt and set aside so that they are on top for decoration. Cut the remaining one in half, forming semi -slices.
Divide the salmon into smaller pieces.
Finely chop the onion and garlic. Heat the butter in a frying pan, throw onions and garlic. Add zucchini, simmer for a few minutes until the excess water evaporates. Finally, add mascarpone and cream. Season with salt, pepper and chopped mint. Boil and leave.
In a heat -resistant dish, put a layer of potatoes, then the entire stuffing and half a portion of salmon in slices. Sprinkle with grated cheese. Arrange the zucchini slices whole and the remaining salmon. Sprinkle with oil.
Bake at 170 degrees Celsius for 20 minutes.
