Zucchini is a low -calorie vegetable that wonderfully irrigates the body. It is juicy and fits many other products, which is why it is considered a good ingredient for a casserole. Although hardly anyone knows about it, it also has a low glycemic index – so it will not cause sugar jumps. It is worth mentioning that its composition also contains potassium, magnesium, iron, as well as B vitamins and vitamins A, C and K. All this makes the vegetable a valuable element of a daily diet.
For preparation zucchini casseroles You will need the following from this recipe ingredients:
- 4 large zucchini,
- 500 g of ground chicken meat,
- 400 g evening mozzarella,
- 300 g Ricotta evening,
- onion,
- Tomatoes,
- egg,
- 2 tablespoons of tomato passage,
- 2 tablespoons of rapeseed oil,
- 3 teaspoons of salt,
- 2 teaspoons of granulated garlic,
- 1/2 teaspoon of black pepper,
- chives to serve.
Heat the oil in a large pan. Add minced meat and fry until browning for about 7-8 minutes.
Finely chop the onion and add it to the meat. Fry the whole until it is nicely applied, for another 5-6 minutes.
Reduce heat and add tomato passata, half salt, pepper and garlic. Bring the whole to a boil and fry for another 5 minutes. Set aside.
Cut the zucchini with a sharp knife or mandoline into thin slices with a thickness of 0.2-0.5 cm. Sprinkle it with the remaining salt and spread it on paper towels. Dry the vegetable well after 15 minutes.
In a small bowl, mix the ricotta with the egg and set aside, and grate the mozzarella cheese on a grater.
Grease a large heat -resistant dish with a thin layer of oil. At the bottom, spread 1/3 of zucchini slices, applying them to yourself if necessary. Then spread 1/3 of the meat sauce and 1/3 of the egg and egg mixture. Sprinkle the whole with a handful of mozzarella.
Repeat folding the casserole for complete finishing of the ingredients. The most mozzarella should be on top.
Cut the tomato into thin slices and put them on top of the casserole.
Insert zucchini casserole into the oven preheated to 190 degrees Celsius. Bake for 45-50 minutes, until nice browning. If the top begins to blush too quickly, cover the whole loosely with aluminum foil.
Remove the casserole and set aside 5 minutes before cutting and serving.
