Homemade zucchini ketchup This is a great alternative to a traditional, tomato version from the store. This addition is full of natural sweets and aromatic spices – the taste of apples gives the taste here.
Ideally suited to sandwiches, burgers or casseroles. Natural, delicious, without unnecessary chemical additives. Be sure to try this recipe.
- 4 large zucchini,
- 500 g of apples (sour),
- 600 g of onion,
- 80 ml vinegar 10%,
- 20 ml of apple cider vinegar,
- 100 g cukru,
- 2 flat tablespoons of salt,
- 5 cloves of garlic,
- 400 g of tomato concentrate,
- 1 teaspoon of ground sweet pepper,
- Half a teaspoon of ground black pepper.
Peel the zucchini, remove the seed nests and grate on a thick grater. Peel the apples, remove the seed nests and also grate. Do the same with onions cut into smaller pieces.
Transfer zucchini, apples and onions into a large pot. Add salt and sugar, mix. Then simmer covered on low heat for 45-60 minutes until everything softens and releases juice. Mix from time to time.
When the vegetables are soft, remove the pot from the heat and mix the whole with a blender to a smooth mass.
Peel the garlic and squeeze through the press.
Now add tomato concentrate, both types of vinegar, garlic, sweet pepper and ground pepper. Stir well and boil. Reduce heat and leave it for 30 minutes.
Pour hot ketchup into scalded jars. Tightly screw and turn the jars upside down or pasteurize for 15 minutes.
