Tomato is one of the most popular soups of Polish cuisine. On Monday, she was a must -have dish with my grandmother. Currently, we can turn up its taste with various additions so that it reminds you of grandma’s soup as much as possible. This time we will focus on bringing light sweetness out of it. It is worth adding to the decoction … birch sugar.
Birch sugar, or xylitol, is a healthier alternative to the classic sweetener, i.e. for white sugar. That is why it is worth adding it to the tomato soup, but we can not overdo it with its quantity. 2 teaspoons per 1 liter of broth are enough.
What ingredients do we need to do with birch sugar? Here is the list:
- 1 l bulish;
- 400 g of tomatoes;
- 300 g of mixed vegetables (carrots, parsley, celery, leeks);
- 2 tablespoons of sour cream 12 percent;
- 2 teaspoons of tomato concentrate;
- 2 teaspoons of birch sugar;
- 1 teaspoon of salt;
- 1/2 teaspoon of pepper.
At the beginning we boil the broth in a pot. Then peel mixed vegetables and cut them into smaller pieces. Cook the whole for about 25 minutes until they get soft.
In the next step, we add previously scalded, peeled skin and diced tomatoes. We also add tomato paste and cook a decoction for another 10 minutes.
Then we season the tomato soup with xylitol, salt and pepper. We can blend it into a smooth cream if we like a creamy consistency.
Finally, we harden cream with a few tablespoons of hot tomato, pour it into the pot and mix everything.
You can add a handful of dried cranberry to the tomato. The sweet and sour taste of these fruits will perfectly complement the sweetness of tomatoes. The soup will gain a tart note.
Mayonnaise is another unusual addition. 2 tablespoons of the product are enough to make the soup expressive and creamy.
Some add to her grater and fried ginger. This is an ideal option for a cold or cooler days.
