The green beans for dinner do not necessarily have to be adorned with a roux of butter and breadcrumbs – it is equally tasty in the light version, for example with oil and garlic. If you prefer a more nutritious variant, reach for healthier accessories than a roux, e.g. walnuts and lightweight cheese. The beans prepared in this way is a great addition to meat dishes or fried eggs.
To prepare this recipe, you will need:
- 500 g of green green beans,
- 75 g of walnuts,
- 100 g feta cheese,
- 2 cloves of garlic,
- 4 tablespoons of oil,
- salt, freshly ground pepper (to taste),
- 1 teaspoon of salt,
- 1 teaspoon of sugar.
Rinse the beans (in a colander, under running water) and cut both ends from the pods. Be careful not to reveal their interior.
Boil about 1.5 liters of water with sugar and salt. Put the beans in boiling water. Cook for about 10-15 minutes – until tender (young beans cook shorter than the older one).
Squeeze garlic through Prague and combine it with olive oil. Peel the nuts, divide into quarters (or chop into smaller pieces) and roast in a dry pan.
Strain the cooked beans, transfer to plates and pour olive oil with garlic. Sprinkle with freshly ground pepper and salt, as well as nuts and crushed cheese (previously heated to room temperature).
