The kitchen of the Polish People’s Republic – this memory among many people causes nostalgia, but you have to remember that it was also a school of survival. To prepare something filling and tasty, often housewives had to really try, and their creativity had no limits. Among their favorite dishes they led the way iron noodlesalso known as gray noodles.

We will not find them in the menu of most exclusive restaurants, but this taste knows perfectly everyone who grew up in the PRL.

Iron noodles This is a regional dish from the Łódź Voivodeship. Where does such a name come from? It’s about their color after cooking. They are also a bit harder than typical potato dumplings, made in different ways – from flour, potatoes, eggs, a bit of salt. Of course, each hostess had its own ways and the recipe underwent minor modifications, but the goal was obvious. It was supposed to be maximally simple, cheap and tasty.

They were especially a hit iron noodles with delicious thy From onions, sometimes with the addition of meat.

Today, times have changed, we can use a much larger number of ingredients, but simple dishes from the PRL are coming back to favor – that’s why on the tables we can also see such noodles.

List of ingredients:

  • 500 g of flour potatoes,
  • 50 g of wheat flour,
  • 50 g of potato flour,
  • 1 egg,
  • 2 teaspoons of salt.

Additionally (for cooking):

Peel the potatoes, then grate them on a fine -mesh grater, set aside on a strainer to get rid of excess water. Underneath, put a vessel where water with starch will accumulate.

After about 20 minutes, squeeze the potatoes thoroughly, transfer them to the bowl.

Pour water from the dish with dripping water, and add the accumulated starch to a bowl with potatoes.

Add both flour, salt and egg to the potato mass. The product is compact, adhesive cake.

In a larger pot, boil water with the addition of oil and salt.

Get the dough with a spoon and form noodles – put it on boiling water and cook for 5-7 minutes after sailing.

Serve iron noodles with omasa with onions and meat (optional).
