When I do for breakfast at the weekend, the family runs to the table. This pancake cream is a total insanity

It is known that pancakes are one of the favorite breakfasts in Polish homes. However, I like culinary experiments and I once decided to prepare lemon cream – Instead of classically served pancakes with jam. It was a real hit, it has long been our favorite family breakfast. It not only tastes great, but also looks good.

Ingredients for lemon cream:

  • 2 lemons,
  • 2 eggs,
  • 110 g cukru,
  • 80 g of butter,
  • 250 g serka mascarpone.

Ingredients for pancakes:

  • 250 ml of milk,
  • 250 ml of sparkling water,
  • 2 eggs,
  • 230 g of wheat flour,
  • 1 teaspoon of sugar,
  • a pinch of salt,
  • clarified butter (for frying),
  • powdered sugar (to be served).

Wash the lemons thoroughly (It’s best to use ecological cultivation fruit). Watch the skin of them and squeeze the juice.

Grate eggs with sugar (in a saucepan where you will cook lemon). Combine with lemon juice and lemon zest. Mix

Add diced butter to the egg mass. Heat on a slow fire, stirring constantly – until the butter dissolves and combines with eggs into a thick mass.

Wipe the cream through a strainer to get rid of lumps. Set aside to cool.

Combine milk with sparkling water and eggs. Mix with a kitchen rod.

Sift flour into liquid ingredients. Add salt and sugar. Mix into a smooth dough.

Melt a small amount of clarified butter in a hot pancake pan. Pour a portion of the dough (incomplete vase spoon) and spread them evenly, moving the pan. Fry the pancake – about 45 seconds on each side. Fry the whole cake in this way. Put fried pancakes on a flat plate.

Combine the cooled lemon cream with mascarpone cheese. Fill warm pancakes with mass. Serve them immediately, sprinkled with powdered sugar.
