Fresella – The Panino of the Italian south

When I came to Naples for the first time, I was very surprised at the omnipresent of the Freselle. Fresella is a circular, dust-dry bread with a hole in the middle and is strongly reminiscent of a cut basin that is located in the southern Italian sun for several weeks. That asked myself that people eat that voluntarily, although there are rather good fresh sourdough wood furnace bread here for all Italian bread prejudices?
