Chanterelles are one of those mushrooms that fit almost everything. There is a lot of recipes with these mushrooms. They taste great marinated, but also fried in a pan with scrambled eggs or other additions. Unfortunately, sometimes bitterness obscures the whole taste of the chanterelles and destroys the favorite dish. How to prevent it and what is the problem? This one addition during frying can save any chanterelle.

Chanterelles are one of the first mushrooms that can be found in the forest in the summer. They prefer dry positions near pines. They even grow on sand. For this reason, they are naturally bitter and sharp. This is where another name of the dining piper came from.

Chanterelles are used in the kitchen in different ways – you can make soup, sauce or use as an addition to pasta, risotto or scrambled eggs. They are also very popular among mushroom gourmets.

Unfortunately, sometimes they are too bitter, which destroys the whole dish, and fried independently difficult to swallow. The reason may be bad time to break the mushroom. The greater bitter will have a tap collected on a dry and hot day. Bad or too long storage can also change the taste. It’s best to fry the taps right after the collection.
