Low -salt cucumbers are formed through the lactic fermentation process. Vegetables flooded with brine produce lactic acid bacteria that convert sugars into lactic acid. Within a few days, carbon dioxide is released in the form of a white coating. Then we don’t have to worry.
The white coating in a jar with cucumbers indicates the correct pickling process. In the case of low -salt, we notice it after 2 days if the vessels stand still at room temperature. In a cooler room, e.g. in the basement, it will happen after 3-4 days.
We should worry when we still don’t see the foam after a few days. Then we are dealing with a too free or inhibited lactic fermentation process. The reason is the use of a small amount of salt or putting jars in a cold room, where the temperature is below 18 degrees Celsius.
It is thanks to the white coating of cucumbers that they gain the right taste and probiotic properties. During pickling, the nutritional value of these vegetables is increased. There is also to produce beneficial bacteria supporting intestinal microflora.

Cucumbers in a jar are not suitable for consumption when they are soft, mucous, covered with white, gray or black mold. Their smell is unpleasant, putrefactive, completely different than the characteristic scent of pickling.
The preparations failed if the flood is cloudy, thick with visible lumps, and it has a bitter, tart taste. Despite the effort, such products must be thrown into the trash.
Cucumbers in jars will not come out broken if we choose firm and fresh vegetables. We must add garlic, dill, horseradish to the dishes, – these additives significantly affect the crunchiness of preserves.
The right amount of salt in brine is also of great importance. It is accepted that we pour 1 tablespoon of this spice on 1 l of water. In addition, the jars should be covered, but not completely tight – in this way we will provide an outlet to fermentation gases.
We store cucumbers in a cool and shady place, preferably in a basement or pantry. By applying these rules, a desired white coating will be created after a few days.
