You fancy a homemade cake, but you don’t know what to bake? If so, put on a simple but extremely tasty German cake with apricots. The recipe is inspired by two popular pastries: Butterkuchen and Schmandkuchen. Sweet fruits combine perfectly with the cottage cheese, and the culmination of baking is butter crumble.
Before you get on baking, prepare the right form. Rectangular works well 25 x 30 cm sheet metal.
To prepare the dough, you will need:
- 300 g of flour,
- 100 g of butter,
- 160 g cukru,
- 3 eggs,
- 200 g of cream 30 percent,
- 1 teaspoon of baking powder,
- A bit of vanilla extract.
Ingredients for cheese mass:
- 250 g of semi -fat curd,
- 200 g cukru,
- 1 packet of sugar with vanilla,
- 2 vanilla puddings,
- 4 proteins,
- 400 G Moreli.
Ingredients for crumble:
- 120 g of flour,
- 60 g of butter,
- 60 g cukru,
- 60 g of almond flakes.
In a bowl, grate eggs with sugar to a fluffy, light mass. Then add dissolved and cooled butter, cream and vanilla extract, and then sifted flour with baking powder. Mix everything thoroughly, but gently to combine the ingredients.
Place the mold with dimensions of approx. 25 x 30 cm with baking paper. Pour the dough and level the top.
In a separate bowl, mix cottage cheese with sugar and vanilla sugar. Add pudding powder and mix again until the mass is smooth. In a separate bowl, beat the proteins to a stiff foam and gently mix them into the cheese mass. Do not mix so as not to lose fluffiness.
Wash the apricots, cut in half and remove the seeds from them.
Pour the even layer of cheese mass onto the dough. Place the apricots on top with a cut side down, lightly pressing them into the mass.
Knead cold butter with flour and sugar in a bowl. Put the resulting crumble on the apricots. Sprinkle the top with almonds.
Heat the oven to 180 degrees Celsius and bake for about 45-50 minutes until it is nicely browned.
