Sometimes complicated recipes deter me – I feel like a dessert, but I don’t want to spend a lot of time to prepare it. That’s why I like simple suggestions like this Fast rhubarb cake. Minimum work, maximum pleasure. The sweetness and acidity of rhubarb make me not forget about this taste. It’s a delicious cake, perfect for coffee and tea – in the season I can’t imagine not making it.

Cake ingredients:

  • 200 g of wheat flour,
  • 80 g of potato starch,
  • 1 teaspoon of baking powder,
  • 5 eggs (size M),
  • 180 g cukru,
  • 230 ml of oil.

Ingredients for crumble:

  • 90 g of wheat flour,
  • 50 g of butter,
  • 50 g cukru.

Additionally:

  • 400 g of rhubarb,
  • 3 tablespoons of cane sugar,
  • 1 tablespoon of potato starch,
  • powdered sugar (for decoration).

Water to room temperature all ingredients.

Wash the rhubarb, cut into cubes and backfill with cane sugar.

Combine the crumble ingredients in a bowl and rub your fingers to the powder. Put in the fridge.

Sift flour, starch (intended for dough) and baking powder through a strainer.

Mix all eggs with sugar to a light, fluffy mass with a mixer at high speed.

Reduce mixer speed. Pour the oil into the mass without interrupting the grinding with a thin stream.

Turn off the mixer. In batches, add loose products to the mass, mixing the dough with a spatula – only to combine the ingredients.

Put a 24×24 cm mold with baking paper. Pour the dough into it.

Sprinkle the rhubarb with potato starch and spread evenly on the dough. The top of the cake is crumbled.

Insert in the oven preheated to 180 ° C. Bake for about 50 minutes (to a dry stick). When the dough cools down, sprinkle it with powdered sugar.
