Ałycza (Latin Prunus Cerasifera), also known as cherry plum, comes from Western Asia and the Caucasus. It is a tree or a shrub usually growing up to 3-10 meters high. The plant is Extremely resistant to difficult weather conditions. It tolerates frosts up to -32 degrees Celsius and drought, thanks to which it grows great in a Polish climate.

It blooms very early, usually already in March, even before the leaves appear. Then white or slightly pink flowers develop on the branches, which are one of the first trailers of spring. Fruits ripen in summer, usually in July and Augustalthough the exact date depends on the variety and weather conditions. They are spherical, have a diameter of 2 to 4 cm and can take on different colors, from yellow, through red-orange, to dark purple. The flesh is juicy, slightly sour, sometimes sweetthanks to which the fruits are great both for raw and preparation of preparations.

Cherry plum is extremely versatile in the kitchen. Thanks to the natural acidity, its fruits are perfect for the preparation of various products:

  • compotes – a refreshing drink for the summer and winter, which can be enriched with the addition of other fruits, e.g. pears or apples,
  • jams and jam – alleva fruits contain a lot of pectins, thanks to which the preparations thicken quickly and have an intense taste,
  • Galaret – ideal for desserts, and natural pectins make them easy to prepare without gelatin,
  • fruit sauces – great in both sweet and dry versions, e.g. as an addition to meats,
  • tincture – Fruits can be poured with alcohol with the addition of sugar, cloves, cinnamon and other spices. This tincture takes on an aroma after a few months of puberty.
