You don’t need much to create a unique holiday dessert – it is in the summer that we have the best summer fruit on hand. Raspberry dream I often do when I have guests, but also always when the household members ask me.
The jelly melting in the mouth, sweet raspberry mousse and the addition of my favorite ingredient – mascarpone – that’s all I need.
Bottom:
- 125 g of cocoa biscuits,
- 50 g of butter,
- 1 pinch of salt.
Raspberry mousse:
- 250 ml of water,
- 250 g malin,
- 2 tablespoons of sugar,
- 2 tablespoons of gelatin.
Cream layer:
- 250 g Serka Mascarpone,
- 100 ml of cream 36%,
- 50 g of powdered sugar,
- 3 teaspoons of gelatin.
Jelly layer:
- 250 g of fresh raspberries,
- 400 ml of hot water,
- 1 package of raspberry jelly.
Prepare the bottom.
Dram the biscuits in the kitchen to small crumbs.
Add melted and cooled butter and salt. Mix the whole until a uniform consistency.
The prepared mass of the 20×30 cm mold lined with baking paper. Insert the bottom in the fridge.
Prepare a layer of raspberry mousse.
Place raspberries with sugar and water in a pot. Boil the whole and cook on low heat for about 30 minutes until the fruit falls apart and the excess liquid evaporates. The mass should be quite thick.
Take the mass off the heat and leave to cool. Add gelatin and mix it well with the mousse. Set aside until room temperature is obtained, and then pour out into the cold bottom. Put in the fridge for at least an hour.
Prepare a cream layer.
Pour a quarter of a glass from the cream and mix gelatin in it. Set aside to swell.
Place all the other ingredients in a bowl and grate well until a uniform consistency.
Heat the gelatin with the cream, mix, mix and add to the cream mass. Mix
Pour the cream mass into raspberry mousse and put the whole in the fridge for at least 2-3 hours, to freeze. Prepare jelly.
Spread fresh raspberries on the already freezed cream mass. In hot water, spread the jelly well and set it off to cool, at least until room temperature
Pour the jelly on the fruit and put in a raspberry dream into the fridge for another 3-4 hours. Serve the dough cold.
