The peak of the season for plums of all kinds is underway and it is worth using it. When preparing preserves, also think about the juice from these fruits. This is a good way for people who do not like to stand in the kitchen for too long.
The basis of good preparations are the appropriate fruit. Mature plums are the best for juice, but still firm. Thanks to this, they are easily overcooked, and the juice gains a deep taste. Hungarian are considered the most suitable variety of plums for juicebecause they have a lot of flesh and a distinct aroma. They are also most often grown in Poland, so it’s easy to buy them. At the peak of the season, their prices are really attractive. Renklody or mirabelle plums are also suitable for juice, although the latter give a drink a bit more delicate and more acidic.
In the store or in the bazaar, choose healthy fruit, without discoloration and without signs of mold. Look for fruit with intense colors and a delicate, shiny skin. Plums have a natural coating and just buy. If the fruits are devoid of it, most likely someone cleaned it to hide something or simply are not the first freshness. Also, avoid buying too soft plums that may have already begun.
The recipe for homemade plum juice is not complicated. How to make it step by step?
Ingredients:
- 2 kg of plums,
- 0.5-0.7 kg of sugar (depending on your preferences),
- 1 liter of water.
Preparation:
Put the washed and cut fruit into a pot with a thick bottom.
Add water and cook on low heat for about 20 minutes until the plums fall apart.
Blend or wipe the fruit, then combine with sugar and boil again.
Pour the hot juice into scalded bottles or jars, tightly screw and pasteurize about 10 minutes.
Plums, both fresh and dried, are a real treasury of B vitamins, vitamin C, potassium, magnesium and fiber. While cooking, some of these values disappear. Vitamin C and some polyphenols are particularly sensitive to high temperatures. The clear juice also practically does not contain fiberbecause it stays in the pulp and skin. However, if we prepare a thick, puree version, then we will keep more soluble fiber.
Despite the losses, plum juice has many health properties, especially for heart and bone. It provides potassium, which regulates pressure and supports the heart.
