Prepare a dinner that both it is easy to doand it tastes very good and is full for a long time. Pancakes with spinach and feta cheese can be served on a daily basis or serve for dinner in a slightly more elegant style. The stuffing is prepared from stewed spinach with the addition of garlic and onions, which will emphasize its delicacy. Added to this is feta – salty and creamy cheese, which gives the dish character. Such pancakes are tasty and extremely healthy – spinach provides iron, vitamins and fiber, and feta – calcium and protein. It is worth preparing them, because it is a great way to smuggle vegetables in an extremely appetizing form.
Ingredients:
Pancakes:
- 100 g of wheat flour,
- 150 ml of milk,
- 100 ml of sparkling water,
- egg,
- 2 teaspoons of olive oil,
- A pinch of salt.
Filling:
- 300 g of frozen or fresh spinach,
- 75 g Sera Feta,
- 50 g of smoked bacon,
- onion,
- 2 cloves of garlic,
- a teaspoon of lemon juice,
- a teaspoon of oil,
- 1/2 teaspoon of salt,
- 1/4 teaspoon of black pepper.
Additionally:
- Sunflower seeds for sprinkling.
Method of performance:
Prepare pancakes. Pour the milk into the bowl. Add the egg and break down the whole. Add flour and mix the whole. Dilute the dough with water. Finally, add olive oil and salt. Set aside the dough for 30 minutes. After this time, heat the pan with a few drops of oil. Apply the mass on the ladle and spread it evenly throughout the surface. Fry pancakes 1-2 minutes on each side. Put the ready pancakes on a plate.
Prepare the filling. Heat the oil in a frying pan. Add diced bacon and melt all fat. Add chopped onion and fry it to vitrify. Then add chopped garlic and continue frying for another minute. Add spinach – frozen fry until the water evaporates, and fresh until you wither. Season to taste with lemon juice, salt and pepper.
Fold pancakes. Apply 1-2 tablespoon of filling on each pancake. Fold each cake in half and again in half. Serve pancakes with spinach and feta immediately after preparation, sprinkled with sunflower seeds.
If necessary, store the pancakes and stuffing in the fridge separately and fold immediately before serving, after a slight heating.
