If you do not eat egg, for whatever reason, point this. It is a relative of the – it has the same creaminess because the yolks are not there with their fat to do their work – but it is equally tasty and prepares with few ingredients. The binder is the PAN, which must be compact; as or that of peaks, for example, and the day before.

The rest of the list of ingredients is composed of garlic, tomato – which provides moisture -, sweet or spicy and, ingredient that you can ignore if you want to make a cheaper version, with forgiveness of the Manchego and their wonderful saffron with DOP. The preparation method is very similar to that of the tortilla, with the only difference that it is very likely to break you when turning it. In this case, do not suffer, reconstruct it on the plate and nobody will have noticed.

Ingredients

For 2 people

  • 1 large potato (about 300 g)
  • 1 garlic clove
  • 1 mature pear tomato
  • 100 g of compact crumb bread from the previous day (Candeal, for example)
  • 8-10 Saffron strands
  • ½ teaspoon of spicy or sweet vera paprika
  • 300 ml of water
  • Olive oil
  • Sal

Instructions

1.

Cut the potatoes into sheets of a couple of millimeters. Sauté them over medium heat in a pan with a good stream of olive oil until they begin to brown.

Laminar the garlic and add it to the pan. Salar.

Peel the tomato and take off your nuggets. Cut it into dice and add it to the pan. Let it be softened next to the potatoes and garlic.

4.

In a mortar grind the saffron. When the tomato starts to get rid of, add it to the pan along with the paprika, half of the water and a pinch more salt.

5.

Once the potatoes are tender, add the bread cut into pieces with the hands and the rest of the water. Mingle.

6.

Lower the heat to a minimum and crush the mixture gently with a spoon or tongue to take the form of an omelet.

7.

When the mixture is drier, take off from the pan and be golden, turn it with the help of a plate.

8.

Cook it on the other side in the same way. Placing once golden.
