Ingredients:

Cheese mass:

  • a kilo of cottage cheese with a bucket,
  • 10 eggs,
  • 350 g cukru,
  • 60 g of butter,
  • a bit of vanilla extract,
  • 500 g of fresh plums (preferably Hungarian, not very juicy),
  • A bit of salt.

Ingredients for shortbread:

  • 250 g of cake flour,
  • 120 g of butter 82% (+ to smear the mold),
  • 60 g cukru,
  • 2 yolks,
  • The skin is rubbed from all over lemon,
  • A teaspoon of ground cinnamon.

Method of performance:

Start with cheese mass. Melt the butter. First, grate the cheese with three whole eggs, sugar and vanilla. When mixing ingredients, add 7 yolks, one after the other. Then pour the melted butter and keep the mass thoroughly. Beat the remaining 7 proteins with a little salt. Mix gently into the cheese mass.

Make a shortcrust pastry now. Combine flour, butter, sugar, yolks, lemon zest and cinnamon. Divide the dough into two parts: roll out the larger and put it with a greased cake tin about 28 cm in size, and put the smaller one into the freezer for 10-15 minutes.

Fold the cheesecake. Spread the cheese mass evenly on the shortcrust pastry. Arrange the plum halves on top (skin down). Pull the smaller part of the dough out of the freezer and grate on top.

Put in a preheated oven And bake at 180 ° C for about 60 minutes, until the cheesecake with plums is browned and well beheaded.
