Racuchy is usually associated with fluffy yeast dough and warm milk, which this yeast activates. However, you do not need to have these ingredients to enjoy delicious pancakes. Just reach for products that are often at hand – Baking soda will perfectly replace yeast, and buttermilk is perfect instead of milk. Thanks to this, the dough still comes out soft, light and slightly fluffy. Such pancakes without yeast and milk are prepared very quickly and do not lose quality. They can be used for a sweet breakfast or as part of a lightweight dessert or afternoon tea. Serve them with fresh fruit, honey, maple syrup, powdered sugar, ice cream and yogurtand they will be even tastier.
Ingredients:
- egg,
- 250 g of wheat flour (preferably type 550),
- 300 ml buttermilk,
- 2 tablespoons of sugar,
- half a teaspoon of baking soda,
- a pinch of salt,
- Frying oil.
Method of performance:
Take all the ingredients from the fridge beforehand to make them room temperature.
In a bowl, beat the egg with buttermilk, add sugar and a pinch of salt, stirring to combine the ingredients.
Sift flour and baking soda directly to wet ingredients. Gently mix the dough with a spoon or whisk, only to combine.
Heat a small amount of oil in a frying pan. Apply portions of the dough with a spoon and fry the pancakes on both sides until golden brown on medium heat.
Drain the ready pancakes with excess fat on a paper towel.
Serve right away.
