Pasta salad with chicken It is a dish full of freshness, colors and unique flavors. Creamy avocado It combines great with an intense taste dried tomatoesand crunchy and sweet corn complements the whole. This salad inspired by the flavors of Mediterranean cuisine, is perfect as a light lunch for work, a tasty lunch or dinner. In addition, such a dish is a real bomb of health -promoting ingredients, it has a lot of protein, healthy fats, vitamins and minerals. It tastes great both hot and cold.
To prepare two portions, you will need:
- 200 g of a pig’s pasta or another favorite,
- 200 g chicken breasts,
- Frying oil,
- Salt, pepper,
- 1/3 teaspoon oregano,
- 1/3 teaspoon of basil,
- 100 g canned corn,
- 1 avocado,
- 25 g of dried tomatoes,
- 1 handful of chives,
- 100 g of grated Parmesan cheese.
Dressing ingredients:
- 100 ml of olive oil,
- 50 ml of tomato passage,
- 50 ml of balsamic vinegar,
- ½ teaspoon salt,
- ½ teaspoon of black pepper.
Cut the chicken into larger cubes, fry until golden brown in olive oil. Season with salt, pepper, oregano and basil.
Prepare dressing by mixing all ingredients. Set aside
Cook the pasta according to the instructions on the packaging. Strain it and transfer to a bowl, add fried chicken, then pour half the prepared dressing so that the paste does not stick when cooling. Mix everything well.
Drain the corn from the pickle. Chop the dried tomatoes very finely. Peel the avocado, remove the stone and cut into small cubes.
In a salad bowl, combine pasta, avocado, tomatoes, chopped chives, corn. Mix the whole with the addition of the second half of the dressing.
Sprinkle the salad with grated Parmesan cheese. Serve immediately after preparation.
Store the remains in the fridge and use within 2-3 days.
