What you need

  • hot peppers, about 200 grams – you can use a mix of species depending on how much you want it to burn it
  • 4-5 cloves of garlic, peeled and slightly sliced
  • 150 ml of white vinegar, ideally apple that has a gentle taste
  • 100 ml of water
  • a teaspoon of salt and a teaspoon of sugar
  • bay

The procedure

  1. Prepare the peppers – Wash them and let them drip. If you don’t want it to be extra hot, you can remove the seeds.
  2. Sterilize the glass – Wash it properly and boil for sure. Better safety than then regret.
  3. Cook the infusion – Put water and vinegar, salt, sugar and bay leaves in the pot. Let it bubble briefly to dissolve everything and join.
  4. Filling – Insert peppers and garlic in a glass alternately. Pour over the hot infusion so that all peppers are submerged.
  5. Closing and resting – Close the glass firmly and allow to cool. Then put it in the fridge. The taste is created in a few days, ideally after 3-5 days.

Small tricks that fit

You can add a few grains of pepper or ginger slices to the brine, and the peppers will get a slightly exotic touch. If you prefer a sweeter tone, try a little honey instead of sugar. The peppers thus loaded are perfectly complemented by roasted meat, pasta or fresh bread.
