This add -on changes everything. The popular salad gains a new character

Baked tomatoes are not only tasty, but also healthy. Under the influence of high temperature, the content of some ingredients changes – although they lose part of vitamin C, they gain more lycopene. This is a strong antioxidant that supports the heart, reduces the risk of cancer and has anti -inflammatory properties. What’s more, lycopene and other fat -soluble compounds are better released, thanks to which the body absorbs them better. That is why it is worth keeping both fresh tomatoes and those after thermal treatment in your diet.

Ingredients:

  • 500 g of cherry tomatoes,
  • 150 g of mozzarella in small balls,
  • 150 g of bread croutons or slices of bread,
  • 2 handfuls of rocket
  • 2 teaspoons of basil,
  • 2 tablespoons of olive oil,
  • a branch of rosemary,
  • 1/2 teaspoon of salt,
  • 1/4 teaspoon of black pepper.

Additionally:

  • Baking olive oil.

Method of performance:

Put the baking tray with baking paper.

The tomatoes cut in half and spread them evenly on the baking tray. Sprinkle them with olive oil, sprinkle with salt and pepper, and also add a teaspoon of rosemary. Put everything in the oven preheated to 110 degrees Celsius and bake for 3 hours. Remove and cool.

Put a handful of rocket in the salad bowl, and then transfer tomatoes, mozzarella and croutons. If you do not have ready -made, you can cut a few slices of bread into cubes and deny them in a pan with a bit of oil and spices. Season with salt and pepper. Sprinkle with olive oil.

Spread a second handful of rocket on top.

Put a salad with baked tomatoes in the fridge for at least an hour. Serve cold or after heating to room temperature.
