Grandma after years revealed the secret of crunchy potato pancakes
Probably everyone will admit that good potato pancakes are those that are perfectly crunchy and have a golden color. Just such pies have always been made by my grandmother. The whole family ate them with taste, and grandmother, although asked many times for her secret recipe with a smile on her face, said it was a secret. Finally, after many years, she told me the secret and confessed that the whole secret of her crunchy potato pancakes stuck in literally one ingredient, which she added to a bowl with a grated vegetable. It was he who made the pancakes compact and crunchy during frying. Do you know what my grandmother adds to them? A bit of potato flour, i.e. starch. Potato flour helps to tie the mass and helps absorb excess moisture with, which translates into a better consistency of pies. And most importantly – adding potato starch to the pies will make their top layer crunchy during frying.
