Young nettle is not just a terror of spring hikers, but also an unexpected hero of the kitchen. Just a few minutes of work and turn into a fragrant pesto full of vitamins, minerals and taste.
Nettle are literally you have free of charge behind the house. They contain vitamins A, C, D, K and a number of minerals such as iron, calcium, magnesium, potassium and many others. Their detoxifying effects have been known for centuries and in modern cuisine they deserve more than just a place in the stuffing. The nettle pesto is not only healthy but also excellent. It has a fresh, slightly nutty taste and perfectly suits pasta, pastries or as a dip.

Recipe for nettle pesto
Ingredients (for about 1 larger glass):
– 2 cups of fresh young nettles (steamed and dripped)
– 4 garlic cloves
– ¼ teaspoon of salt
– ½ cup of olive oil
– ½ cup of walnuts
– 1a ½ cup of grated parmesan
Procedure::
1. In a large pot, bring water to a boil. Place the nettle in boiling water for 1 minute, then remove them and place them in a bowl of icy water. Allow to drain.
2. Put the sliced garlic, salt, dripped nettles and olive oil into pieces. Mix to a coarser paste.
3. Add walnuts and parmesan and mix again until the mixture is smooth and creamy.
4. If the pesto is too thick, add some more oil or a few drops of nettles.

The nettle pesto is more than an unusual kitchen fad. It is a return to the roots, literally and figuratively. Nettle is a plant that can strengthen the hematopoiesis, and give the body strength after the winter. In addition, it grows almost everywhere, so it is available even without visiting the farmer’s market.

If nettles are tasted, do not be afraid to experiment. You can add other spring herbs such as ash, bear garlic or basil. Nuts can be alternated to taste and allergies: hazel, sunflower seeds or almonds are also excellent. You can lubricate such a green elixir on bread, mix with pasta, add pizza or serve to baked vegetables.
