History and origin

The word “mujei” comes from the Romanian “Must de AI”, ie “garlic cider”. Traditionally he was preparing And by mixing it with a little oil or water. This procedure dates back to the Middle Ages, when the sauce was a common part of the daily diet of Romanian villagers. Majdei served to meat, fish, potatoes and vegetables and soon became an essential part of Romanian cuisine.

Ingredients:

  • 10 garlic cloves

  • 50 ml of sunflower or olive oil

  • 0.5 teaspoon of salt

  • 1 teaspoon of white vinegar (or balsamic)

  • 50 ml of water or yogurt (for a finer variant)

Procedure::

  1. Peel the garlic and chop finely or crush with a mortar.

  2. In a bowl, mix garlic with salt and 1-2 tablespoons of oil.

  3. Gradually add the rest of the oil until a thick paste is formed.

  4. Add vinegar and mix well.

  5. If you want a finer sauce, add water or yogurt to the desired consistency.

Variants of mujdei

Classic Mujdei

The simplest version with garlic, oil and vinegar. It has a distinctive, pure taste that fits almost everything.

Gypsy Majdei

The basic paste is added ground pepper, which gives the sauce a spicy tone. It is perfectly complemented by grilled meat or sausages.

Lent mujdei

Ideal for vegetarians and vegans – without animal products, with water instead of yoghurt. Suitable for baked potatoes, steamed vegetables or tofu.

Mujdei s Jogurtem

Adding white yogurt results in a creamy, fine version of the sauce that softens the sharp taste of garlic. It is suitable for vegetable dishes and fish.

For festive administration, you can decorate Majdei with chopped parsley, coriander leaves or slightly sprinkled with pepper.
