When I told my husband that I was baking today Tears of Wałęsahe was very surprised – as it turned out, in his family this funny name did not function, but in mine she was well known. This unique cheesecake with Rosa quickly became his favorite cake and he adheres to him regularly.
The characteristic feature of this baking is “tears”, or small droplets that appear on the surface of the cheese mass after cooling. Once this cake was very popular at home parties and in my opinion it is time to return to favor because it is sensational.
Shortbread:
- 320 g of wheat flour,
- 1 egg,
- 2 yolks,
- 100 g of powdered sugar,
- 70 g of chilled butter,
- 2 teaspoons of baking powder.
Cheese mass:
- 1 kg of cheese from a cheesecake bucket,
- 120 ml of milk,
- 1 egg,
- 2 yolks,
- 200 g cukru,
- 80 ml of oil,
- 1 package of cream pudding without sugar.
Foam:
- 5 proteins,
- A bit of salt
- 100 g cukru,
- 1 teaspoon of cream pudding without sugar.
Make the bottom and sides of the dough. Chop the butter with flour. Add egg, yolks, powdered sugar and baking powder. Knead the dough, wrap in cling film and cool in the fridge for about 30 minutes.
Grate the egg and yolks with sugar to a fluffy mass. Gradually add cheese, milk and pudding, still mixing so that the mass is uniform. Finally, pour in the oil and mix.
Pull the bottom and sides of the cake tin (approx. 26 cm). Pour the cheese mass onto the dough. Bake for about 60 minutes at 180 ° C.
At the end of baking, beat the protein to a stiff foam with a little salt, gradually adding sugar. Finally, add a teaspoon of pudding powder and mix gently.
Put the foam on the hot cheesecake and bake for another 15 minutes at 200 ° C until slightly browned. Set aside to cool completely.
