Juicy, filled with aromatic filling Chicken breast with spinach and juicy tomatoes This is a real feast for the senses. A dry, aromatic interior adds taste of poultry meat. A layer of crunchy coating gives the dish an interesting texture and color. This dish is perfect for both an elegant dinner and a quick family meal.
To prepare this recipe, you will need:
- 4 single chicken breasts,
- 50 g of dried tomatoes from oil,
- 50 g of spinach,
- 4 slices of yellow cheese,
- ½ teaspoon salt,
- ½ teaspoon of black pepper.
Breading:
- 100 g of breadcrumbs,
- 50 g of wheat flour,
- 2 eggs.
Additionally:
- Oil for deep frying.
Serve the ready dish with fries, looked after potatoes, or purée. A light salad with rocket, basil, tomatoes and mozzarella. And also Cooked vegetables, for example, broccoli, carrots or asparagus beans.
Prepare the meat. Clean chicken breasts and cut along the long side, creating a pocket, but not cutting them completely. Season the meat with salt and pepper, rubbing it well from all sides.
Put in a slices of cheese, then hope the breasts with dried tomatoes and spinach. Use toothpicks, push your breasts so that the stuffing does not fall out.
Prepare the coating. Pour the flour and breadcrumbs into a deep plate. Mix them. In the second deep plate, scare the eggs.
In a deep frying pan or pot, heat the oil to deep frying, up to 170 degrees Celsius.
Rub each chicken breast in an egg, then in breadcrumbs, again in the egg and roll. Put them individually in hot fat and fry until nice browning on each side for about 4-5 minutes.
Transfer the chicken into an ovenproof dish and put it in the oven preheated to 180 degrees Celsius for about 20 minutes until the meat is well baked.
