Sometimes I want to cook something less standard than chops for dinner – that’s when I reach for recipes like the one on Cheese pancakes with spinach. I like to serve them with a solid portion of salad, although they are also very healthy in themselves.
- 150 g of semi -fat curd,
- 100 g of fresh spinach,
- 2 cloves of garlic,
- 30 g of Parmesan cheese,
- 4 tablespoons of flour,
- 2 eggs,
- ½ teaspoon of baking soda,
- 1 teaspoon of Provencal herbs,
- salt, pepper (to taste),
- clarified butter (for frying).
Heat some butter in a pan. Shortly fry the garlic squeezed through the Prague. After a while, add spinach and mix. Fry for 2-3 minutes, until the spinach wants. Season with salt and pepper.
Put the cottage cheese in the bowl and crush it with a fork. If you want it to have a smoother consistency, use a potato pestle.
In a separate dish, beat eggs with a pinch of salt – so as to aerate them.
Combine cottage cheese with eggs, flour, grated grater with Parmesan cheese, herbs and soda. Mix to a homogeneous mass. Mix the spine from the pan into it.
If necessary, melt in a pan where the spinach was fried, some still butter. Apply 2 tablespoons of dough, forming round pancakes. Fry them on a slow fire-2-3 on each side. Fry the whole cake in this way.
Fried pies do not require any additives, but you can serve them, e.g. with garlic dip.
