The following recipe is a great proposition for people who like Sweet and sour fruit baked goodswhich are at the same time light as a sponge cake. Gorn fruit cakes They are often quite heavy and moist. A lighter consistency can be obtained thanks to several tricks, e.g. by adding lemon juice to the mass. Fluffy cake with plums It will meet the expectations of the most common gourmets.
To prepare this recipe, you will need:
- 500 g plums,
- 200 g of butter,
- 175 g cukru,
- 4 eggs,
- 300 g of wheat flour,
- 2 teaspoons of baking powder,
- ½ teaspoon salt,
- 200 ml of milk,
- 1 teaspoon of vanilla extract,
- 1 tablespoon of lemon juice,
- powdered sugar (to sprinkle the dough).
You can serve the finished dough or serve the household with a rich version. A slightly warm dough will blend in perfectly with a knob of vanilla or cream ice cream and a bit of homemade whipped cream.
Water all ingredients to the dough to room temperature. Wash the plums, cross -section into halves and remove stones.
Grate the butter with sugar to a light fluffy mass. Not interrupting grinding, add one yolk to the mass. Beat the proteins to the foam.
In a separate dish, mix the flour, baking powder and salt sifted through a strainer.
In batches, add flour to the mass alternately with milk. Then mix in vanilla extract and lemon juice. Mix the mass with a spatula – only to combine the ingredients. Finally, gently mix the protein foam into the dough.
Put a 23 cm diameter cake tin with baking paper. Transfer the dough into the cake tin and level its surface. Spread plums evenly on the dough and lightly press them inside.
Put the dough in the oven preheated to 180 ° C. Bake for about 45-50 minutes – to the so -called dry stick. Remove the baked dough from the oven and leave it to cool completely.
Sprinkle the cake with powdered sugar before serving.
