Sometimes my family wants a sweet afternoon tea, something that you can eat with coffee and tea. Then I usually make pudding buns that melt in my mouth.

Cake ingredients:

  • 500 g of cake flour,
  • 25 g of fresh yeast,
  • 250 ml of milk,
  • 70 g cukru,
  • 2 eggs + 1 yolk,
  • 50 g of soft butter,
  • A pinch of salt.

Filling ingredients:

  • 300 ml of summer milk (about 35 ° C),
  • 3 tablespoons of sugar,
  • 1 packet of vanilla pudding without sugar (40 g),
  • 1 yolk,
  • 2 tablespoons of butter.

Additionally:

  • powdered sugar (to sprinkle).

Prepare the stuffing for rolls. Boil about 250 ml of milk with sugar in a saucepan. In the rest of the milk, mix the pudding powder. Mix with yolk.

Pour the leaven into the pudding into a saucepan when the milk turns. Mix vigorously immediately. Cook, stirring constantly until the pudding thickens. Then remove the saucepan from the burner, mix the butter into the pudding and set aside to cool. Cover the surface of the pudding with foil so that no sheepskin coat.

Prepare the cake. Crush the yeast into the bowl and mix with a spoonful of sugar. When the yeast dissolves, pour in 100 ml of milk. Mix with yeast. Leave for 15 minutes in a warm place. The solution should be foaming and significantly enlarge your volume.

Sift flour to the mixer bowl. Pour the rest of the sugar and salt. Add a solution, 1 egg and yolk. Make a hook tip, gradually adding the rest of the summer milk, and then butter. The dough should become smooth, flexible and easily leave the walls of the bowl.

Transfer the dough to a clean, slightly greased bowl, cover with a cloth and set aside in a warm place for about an hour. At this time, it should at least double its volume.

Knead the grown dough briefly and roll out on a narrow rectangle on a narrow rectangle with a thickness of about 6-7 mm.

Evenly spread the dough with a cooled pudding, leaving about 1 cm margin on the longer sides. Collapse in a roll along the long side. Cut it into sections with a length of 8-10 cm. Place the prepared rolls on a baking tray lined with baking paper, leaving large spacing between them. Cover with a cloth and set aside for half an hour to grow.

Brush the top of the rolls with a broken egg. Put in the oven preheated to 180 ° C. Bake for about 20 minutes – until the rolls are browned. Cool the rolls on the grille and sprinkle with powdered sugar.
