Fluffy chocolate cheesecake Cold is an extremely creamy and delicate dessert with a distinct taste of dark chocolate with broken sweet cream and vanilla.
Bottom:
- 200 g of cocoa biscuits,
- 100 g of butter,
- 1 tablespoon of sugar.
Cheesecake layer:
- 700 g cream cheese,
- 250g of dark chocolate,
- 170 g of powdered sugar,
- 60 g sour cream 18%,
- 1 teaspoon of vanilla extract.
Prepare the bottom.
Melt the butter and cool.
Grind the biscuits in a kitchen or powder blender. Add butter and sugar. Mix the whole until the consistency of wet sand.
Put the cake tin with a diameter of 24 cm with baking paper, and then pitch with the bottom with a cookie mixture. Press the whole with your fingers or a glass.
Put the ready bottom in the fridge for at least 30 minutes.
Prepare the cheesecake layer.
In a large bowl, keep cream cheese until a smooth and creamy consistency. Add powdered sugar and mix, and finally add cream and vanilla. Blend.
Break the chocolate and dissolve in a water bath or microwave. Set aside to cool to room temperature, and then pour it into the cheesecake mixture. Mix and beat the whole for another 2-3 minutes.
Spread evenly the cheesecake mass on the cold bottom. Cover the whole with cling film and put in the fridge for 4 hours or overnight.
Serve the fluffy chocolate cheesecake cold. Cut it with a knife previously immersed in hot water and cut dry.
