Zucchini pancakes They are more fluffy and soft than classic pies, all thanks to the addition of baking powder and natural yogurt. Be sure to add to them too onion and yellow cheese, Thanks to which they will taste even better. Such a dish will definitely taste the whole family. If you do it once, the household members will definitely ask you for a repeat.
To prepare this recipe, you will need:
- 400 g of zucchini,
- 1 onion,
- 2 eggs,
- 150 g of wheat flour,
- 1 teaspoon of baking powder,
- 100 g of grated yellow cheese (e.g. Gouda, cheddar),
- 1 small natural yogurt (approx. 100 g),
- salt and freshly ground pepper to taste,
- A pinch of turmeric or curry (optional, for color),
- Frying oil.
Give the ready pancakes with garlic sauce, All you have to do is combine a few tablespoons of natural yogurt in a bowl, garlic squeezed through Prague, chopped dill, salt and pepper.
Wash the zucchini, grate on a thick grater and squeeze the excess of juice well.
Pick up the eggs into the bowl and beat them lightly. Add natural yogurt, flour mixed with baking powder, salt, pepper and spices. Mix until smooth.
Add grated and squeezed zucchini, finely chopped onion and grated cheese to the dough. Mix everything thoroughly. The mass should be slightly thicker than for classic potato pancakes.
Heat the oil in a frying pan. Apply portions of dough with a spoon and fry on medium heat until golden brown on both sides (zucchini pancakes should be slightly fluffy).
