Many people love to cook soups. You can do them on the basis of various vegetables. This time, however, we will focus on this pumpkin. The ingredients for it should be thought out – after all, they decide about the deep taste and aroma of the whole dish. What if we add a certain fruit to the pumpkin soup? Then the best combination will be created, which will conquer every taste buds.
Mango is a fruit that is worth adding to. It is thanks to the pulp that the cream will have a slightly exotic aftertaste. In addition, it will become even more aromatic.
The main ingredient, however, is the pumpkin itself – It is best to choose a soft skin with a soft skin that you do not need to peel. We just need to hollow the vegetable from the seed nests and cut it into smaller pieces.
What ingredients do we need to make pumpkin soup with mango? Here is the exact list:
- 1 dynia Hokkaido;
- 1 l of vegetable broth;
- 200 ml coconut milk;
- 50 ml pulpy z mango;
- 2 carrots;
- 1 onion;
- 3 cloves of garlic;
- 2 tablespoons of honey;
- 2 tablespoons of oil;
- 1 tablespoon of butter;
- 1 teaspoon of curry;
- 1 teaspoon of hot peppers;
- Salt and pepper as desired.
The cream tastes delicious with baked pumpkin – it is even sweeter then. Place the vegetable sprinkled with honey and sprinkled with salt on a baking tray with whole cloves of garlic. Bake in the oven preheated to 200 degrees Celsius for about 15 minutes (the pumpkin must be soft so that it can be mixed).
Fry the carrot and chopped onion cut into butter until the vegetables are fried. Then put them into a pot and pour the broth. We also add baked pumpkin, garlic, mango pulp and coconut milk. The whole is brought to a boil and cook on low heat for a few minutes.
In the next step we season the pumpkin soup of curry and hot peppers. We also add olive oil and mix everything into a smooth cream. If it comes out too thick, we can add some water to it. Finally, season the dish with salt and pepper.
Pumpkin soup tastes great with puff peas. You can also serve it with garlic croutons. Just cut the bread into pieces, spread it with butter with the addition of garlic squeezed by Prague and bake in the oven until it becomes golden and crunchy.
Before serving, we can decorate the cream with a blot of sour cream or natural yogurt. It also goes well with crushed feta or gorgonzola.
We recommend sprinkling pumpkin soup with roasted pumpkin seeds or shelled sunflower. You can really use any grains and nuts here. Thanks to this, the dish will be pleasantly crunchy.
