For some, the name of the dessert will probably only associate with the program for children from the 80s, where the playful Pankracy dog ​​put everyone in a good mood. You can say that the cake is as tricky as the main character of the series. This variation on Brownie is surprising. Consists of Two layers of a melting chocolate countertop, between which a crunchy, shortcake is hidden. The whole is topped with chocolate coating and sugar sprinkleswhich gives dessert a variety of textures.

Pankracy is full of contrasts – it combines moist and expressive brownie with crunchy sprinkles and sweet topping. This is an ideal proposition for those who like a classic American cake with a small twist and want to surprise the household members or guests with a unique dessert. Preparation is not very complicated, and the effect will really please the recipients.

Ingredients:

Brownie:

  • 200 g of dark chocolate,
  • 200 g cukru,
  • 150 g of butter,
  • 100 g of wheat flour,
  • 3 eggs in size L or XL,
  • 30 g of powder cocoa,
  • a teaspoon of vanilla extract,
  • 1/2 teaspoon of salt.

Crumble layer:

  • 100 g of wheat flour,
  • 60 g of butter,
  • 50 g cukru,
  • a pinch of salt,

Chocolate coating:

  • 100 g of dark chocolate 60%,
  • 50 ml cream 36%.

Additionally:

  • Sugar sprinkles for sprinkling.

Method of performance:

Prepare a crumble layer. Mix flour, sugar and salt in a bowl. Add cold butter cut into small cubes. Dry all ingredients with your fingers to obtain the consistency of wet sand. Form a ball, wrap it in cling film and put in the fridge for 30 minutes.

Prepare Brownie. Melt the chocolate in a pot with butter. Mix until a smooth consistency and set aside to cool for a while. Add sugar to the slightly cooled chocolate mass and mix thoroughly until dissolved. Stick one egg, stirring well after each of them. Finally, pour vanilla extract. In a separate bowl, mix the flour, cocoa and salt. Gradually add dry ingredients to wet, stirring only to combine.

Bake the dough. Place the baking mold with dimensions of 20×20 cm with baking paper. Pour half the brownie mass into it. Insert into the oven set to 180 degrees Celsius and bake for 15-20 minutes, to a light cut.

Place the crumble ball on the counter on a sheet of food film and cover with a second sheet. Roll it out into a cake with dimensions of about 20×20 cm or slightly larger. Carefully move the dough to previously baked brownie. Do not worry if the cake crumbles or breaks in your fingers – it will not be visible. Leave any pieces protruding beyond the form, and sprinkle with the remains.

Carefully pour the second half of the brownie mass. Put the dough into the oven again and bake it for another 35 minutes. Remove and set aside to cool completely.

Prepare the topping. Crush the chocolate and put in a bowl. Pour it with heated cream to a temperature of 50 degrees Celsius. Set aside for a minute. Mix the coating until a uniform consistency and set aside to slightly cool. Then pour it on top of the dough and sprinkle with sugar sprinkles.

Put Pankracy in the fridge for at least 2 hoursthat the topping is concentrated.
