Sea cabbage is a classic of Czech cuisine that fits meat, salads or just taste. At the same time, its preparation does not have to be lengthy or complex. If you have several at hand, you can prepare fresh, crispy and juicy cabbage in three days at home.

What you need

For fast homemade sauerkraut you only need head cabbage, salt and possibly cumin to taste. That’s all you need to make it tasty and healthy.

First remove the top leaves of the cabbage and cut it into thin strips. Pour them into a bowl, sprinkle with salt and rub the cabbage with your hands. Salt releases juice, which is also a breeding ground for milk fermentation. If you want, you can add a little cumin for traditional taste.

Press the finished cabbage firmly into a clean glass or ceramic container. The juice should completely cover the cabbage – if not, add a little water. Cover with a cloth or free lid and leave at room temperature. Mix the cabbage lightly or push the cabbage to remain submerged in the juice.

Done in three days

Thanks to the short fermentation time, you will get cabbage fresh, crunchy and slightly acidic taste, ideal for quick preparation. If you prefer more acidity, you can extend the process by another day or two, but the three -day version is delicious and perfectly suited to salads, sandwiches or the main food.
