Do you dream of a grinded fruit cake that will be soft, fluffy and moist, but without a taste of baking powder? Prepare dough on buttermilk According to the provision below.
- 500 g berries,
- 1-2 apples,
- 4 eggs,
- 150 g cukru,
- 180 g buttermilk,
- 1 teaspoon of vanilla extract,
- 150 g of liquid butter,
- 250 g of wheat flour,
- ¾ teaspoon of baking soda,
- a pinch of salt,
- 1 tablespoon of lemon juice,
- powdered sugar (to sprinkle the dough).
Water all ingredients to the dough to room temperature. Remove from apples (2 small or one large) seed nests. Cut the pulp into thin slices.
Grate eggs with sugar to a fluffy mass. Use a mixer at high speed.
Mix the buttermilk, vanilla extract and cooled butter into the mass.
Sift flour with soda and salt through a strainer. Add to mass in batches. Mix with a spatula – only to combine the ingredients. Finally, mix a tablespoon of lemon juice into the dough.
Liberate and put a 23 cm diameter cake tin with baking paper. Transfer the dough to it and level its surface. Drough the berries evenly on the dough and lightly press them inside. Also put apple slices.
Put the dough in the oven preheated to 180 ° C. Bake for about 45-50 minutes (to a dry stick).
Take the baked dough out of the oven and leave it to cool completely.
Sprinkle the cake with powdered sugar before serving.
