Although the red beetroot has gained the greatest fame in cuisine around the world, his yellow relative is increasingly beginning to appear in stores and plates (also in Poland). They differ in color, but this is not the only feature that is worth paying attention to:

  • Taste: Red beetroot can be intense and earthy, a Yellow is milder, slightly sweet and less “beetroot”. This makes it easier to smuggle it in children’s dishes or desserts,
  • coloring: Yellow beetroot leaves no difficult to remove the squareM – a huge plus for everyone who likes to cook, but not necessarily spend the evenings over scrubbing countertops,
  • Culinary use: both varieties are suitable for cooking, baking, pickling and juicesbut yellow beetroot opens additional possibilities – from light cocktails to dessert cakes.

Just because yellow beetroot does not mean that it is poorer in nutrients. On the contrary – Has a lot of health advantages.

  • Potassium richness – supports the heart, helps regulate pressure and cares about the circulatory system.
  • Antioxidants – contains beta -carotene and other compounds that protect cells from oxidative stress.
  • Folic acid – especially valuable for pregnant women and all who want to support the proper functioning of the nervous system.
  • Vitamin C – strengthens immunity, accelerates healing and supports the skin.
  • Anti -inflammatory properties – regular eating yellow beets can reduce the risk of atherosclerosis, type 2 diabetes or neurodegenerative diseases.

Thanks to this, yellow beetroot is not just an alternative to red. It is a superfood that can be crushed raw, add to juices and served in many forms.

Yellow beetroot gives a chef a lot of freedom. Its mild taste makes it work in both salty and sweet compositions.

Raw – straight on a plate

The simplest option is to grate it on a grater and add it to the salad. In combination with apple and lemon, it gives a fresh, crunchy accent. It is worth remembering that eaten raw provides the most vitamin C and fiber.

Baked – golden cubes for dinner

The baked yellow beet becomes soft, aromatic and slightly caramelized. You can cut it into cubes, sprinkle with oil and sprinkle with thyme. This is a great addition to fish, baked chicken or vegetarian curry.

Soups and creams

Yellow beetroot soup impresses not only with its taste, but also with color. Instead of a red, intense color we have a delicate, golden shade. The addition of garlic and cumin will make the whole thing become character.

If you have a juicer at home, try to combine yellow beetroot with orange and ginger. The refreshing juice will add energy and support immunity. In Smoothie, it goes well with mango and banana.

Silage and soreness

Yellow beetroot can be mowed as well as red. The sourdough from it is more delicate and less intense in taste, but equally valuable for the intestines and immunity.

  • 1 potato
  • 1 onion
  • vegetable broth
  • spices (thyme, pepper, salt)

Cut, fry, pour the broth and cook until tender. Blend. The soup will be creamy, golden and perfect for cooler evenings.

Yellow beetroot and fete salad

  • 2 Baked yellow beets
  • A handful of rocket
  • 100 g sera fat
  • Oliwa and lemon

Combine the ingredients, decorate with parsley and serve as a light dinner.

Sunny smoothie

  • 1 yellow beetroot
  • 1 Banana
  • ½ mango
  • A piece of fresh ginger
  • orange juice

Mix and drink right away – vitamin bomb and color that improves mood.

Although it still remains less popular than red, the yellow beetroot deserves a chance. You will appreciate it for a mild taste, wide application and health -promoting action. The plus is that it does not dirty the kitchen, clothes and hands (especially the small ones).
