One pan, two variants, zero stress. If you have zucchini and salmon at home, you can prepare a simple but really tasty food without unnecessary clutter. You can choose between the fresh lemon-collision or more pronounced Mediterranean style.

When they connect with quality salmon, there is a dish that will not burden you. Neither on a plate nor in the kitchen. Whether you choose a variant baked in an oven with a herb crust or a juicy Mediterranean risotto with an ORZ in a pan, the result will surprise you with ease and intensity of taste.

Salmon with zucchini and lemon-balm crust

Ingredients (on 4 portions)

– 4 salmon fillets (approx. 140 g each)
– 4 zucchini, sliced ​​into thicker wheels
– 2 tablespoons of olive oil
– salt and freshly ground pepper

On the herb crust:

– 2 tablespoons of brown sugar
– 2 tablespoons of lemon juice
– 1 tablespoon of Dijon mustard
– 2 garlic cloves, chopped
– ½ teaspoon of dried dill
– ½ teaspoon of dried oregano
– ¼ teaspoon of dried thyme
– ¼ teaspoon of dried rosemary
– salt and pepper to taste
– 2 tablespoons chopped fresh parsley (for sprinkling)

Procedure::

1. Preheat the oven to 200 ° C and prepare a baking sheet lined with baking paper or oil.

2. Make one layer on a sheet, drizzle with olive oil, season with salt and pepper.

3. Mix all the ingredients to the herb mixture and spread the top of the salmon fillets with this mixture.

4. Place the salmon between the zucchini on the baking tray and bake for about 16-18 minutes until the fish is soft and the zucchini is slightly golden.

5. Sprinkle with fresh parsley before serving.

Mediterranean salmon with zucchini and orz

Ingredients (on 4 portions):

– 4 Filey Lososa
– 2 medium zucchini, sliced
– 1 smaller shallot, chopped finely
– 3 garlic cloves, chopped
– 1 tablespoon of olive oil
– 1 tablespoon of butter
– 1 cup of Orza (or other small pasta)
– 2–2.5 cup of vegetable broth
– ½ lemon juice
– 50 g foot acid
– fresh dill, salt and pepper to taste

Procedure::

1. Heat it in the pan and fry the zucchini with a pinch of salt and pepper briefly, then put it aside.

2. In the same pan, fry the salmon from both sides until golden (about 3-4 minutes on each side), then put it aside.

3. Add butter, sing shallots and garlic on it. Sprinkle the ORZO and roast until it starts to gild.

4. Pour the broth and cook over low heat until the ORZO absorbs liquid and is not soft. Stir as in the preparation of risotto.

5. Put the zucchini back to the pan, mix, place the salmon on top, sprinkle with a fet, drizzle with lemon and decorate with fresh dill.
