Cream cake with apples it’s an interesting variation on the classic dessert. The cake is easy to make, but requires some patience because it consists of several layers. The puff pastry boards will be postponed vanilla cream based on milk, cream and eggs, and simple apple mass with the addition of butter, gelatin and, of course, fragrant cinnamon. This delicacy will be a hit at every autumn party.
To prepare the dough, you will need:
- 2 sheets of puff pastry.
Ingredients for the cream:
- 800 ml of milk,
- 400 ml whipping cream 36%,
- 3 eggs,
- 200 g cukru,
- 70 g of potato flour,
- 1 pinch of salt,
- 1 teaspoon of vanilla extract.
Ingredients for the apple layer:
- 500 g apples,
- 2 tablespoons of sugar,
- 1 tablespoon of butter,
- 2 teaspoons of gelatin,
- 50 ml of hot water,
- 1 teaspoon of cinnamon.
Additionally:
Preparation of countertops.
- Unroll the puff pastry and brush it with beaten egg. Bake them at 200 degrees Celsius and bake for 15-20 minutes until the tops become crispy and golden.
- Divide each of the two layers into two parts, creating four identical cake layers.
- Set the scraps and crumbs of the puff pastry aside after baking.
Prepare the cream.
- Crack the eggs into a pot. Add sugar, potato flour and salt.
- Heat everything over low heat, stirring constantly with a whisk, until you obtain a uniform consistency.
- Pour in the milk and heat over medium heat until thickened. Finally, add vanilla extract and mix everything again.
- Pour the vanilla cream into a clean bowl and cover it tightly with foil to prevent a skin from forming. Leave to cool.
- Whip the cream until soft peaks form. Add the vanilla cream a spoonful at a time, mixing after each spoonful until combined. Put everything in the fridge to set.
Prepare the apple layer.
- Dissolve gelatin in water and leave to swell for about 5 minutes. Then heat it and mix it.
- Peel the apples and cut into small cubes.
- Melt the butter in a pan. Add apples, sugar and cinnamon. Fry everything for 10-15 minutes until the fruit softens.
- Remove the fruit from the heat and leave to cool slightly. Stir in the gelatin and leave to cool completely, when the mixture begins to thicken slightly.
Assemble the dough.
- Place one cake layer on a cake stand and spread half of the cream on it. Cover with the second layer and spread the other half of the cream.
- Place the third layer of cake on the cream and spread half of the apple mixture. Place the fourth cake layer and place the second half of the apples on it.
- Sprinkle the top with previously reserved puff pastry crumbs.
- Put the cream with apples in the fridge for at least 2 hours. Serve cold.
