A simple cranberry pie is a unique recipe for autumn and winter. It will delight everyone with its lightness and distinctive, slightly sour taste of fresh fruit, but you can also use frozen fruit. Thanks to its delicate consistency and aromatic notes of vanilla, it is perfect both as a sweet snack for afternoon coffee and as an impressive dessert for family gatherings or a holiday table. This is an ideal proposition for those who value quick, home-made baking.

Ingredients:

  • 500 g glass of sugar,
  • 300 g of flour,
  • 200 g of soft butter,
  • 340 g of fresh cranberries,
  • 80 ml of milk,
  • 4 eggs, size L or XL,
  • 2 teaspoons of vanilla extract,
  • a teaspoon of baking powder,
  • 1/2 teaspoon of salt.

Additionally:

  • flour to coat the fruit.

How to do it:

In a mixer bowl, beat the eggs and sugar for 4-5 minutes until you obtain a light and fluffy mass of double volume.

Chop the butter into small cubes and add it to the egg mixture, along with vanilla and salt. Continue mixing for another 2 minutes until the ingredients are combined.

In a medium bowl, mix flour and baking powder with a whisk.

Add the dry ingredients and milk alternately and in batches to the rest of the dough, mixing gently with a spatula.

Mix cranberries with flour. Gently fold the fruit into the dough, being careful not to crack it.

Transfer the mixture to a 23 cm diameter cake tin lined with baking paper. Smooth it out gently.

Place a simple cranberry cake in the oven preheated to 175 degrees Celsius and bake for 50-55 minutes, until the stick is dry.

Remove the cake and leave it in the tin to cool completely.
